What do you guy's recommend for good fantasy and/or sci-fi series to read? (Please see details)?

I've already read the Dune books, and The Sword of Truth series, and all of what's out for the Wheel of Time books. And Tolkien of course. And far too many others to remember.... I like RA Salvator, but I can never remember what I've already read of his.... meh.
